Cut of the Month: Minute Steak

The Lobel family of Lobel’s Prime Meats in Manhattan and Lobel’s of New York online butcher shop are fourth- and fifth-generation butchers. Boneless strip steaks are among our most popular steaks, and most people are familiar with this popular steak-lover’s favorite.

What you might not be familiar with is a hidden gem in our butcher shop that we call a “minute steak.” The Minute Steak is our version of a petite boneless strip steak. It’s 4 ounces, USDA Prime grade, and dry aged to perfection.

Just like our full-size boneless strip steaks, the Minute Steak‘s fine marbling, hearty flavor, and toothsome texture make this steak a customer favorite.

Because of its small portion size, this steak is thin and cooks very quickly. It only takes a minute or two per side to be grilled or pan-grilled to a perfect medium-rare—hence its name!

Its size makes the Minute Steak an ideal choice for breakfast, whether you prepare it as part of a steak and eggs feast, a full Irish or English breakfast, slice it into a breakfast burrito, or on a breakfast sandwich.

It’s also a great solution for quick weeknight dinners or hearty lunches—because it’s a snap to prepare, it you have a delicious steak sandwich a steak salad ready in no time. It’s also fantastic sliced for fajitas, burritos, wraps, and stir fry.
